Hi everyone, hope your weekend is off to a great start! I wanted to share one of my favorite summer dishes with you today: a peach and basil salad. I love that this salad is flavorful, healthy, and very easy to prepare.
- 2 cups of spring mix
- 1 medium peach, diced
- 3oz grilled chicken (optional)
- 1oz goat cheese
- 1/2 a red onion, sliced
- 2 tablespoons walnuts
- Fresh torn basil leaves
- Oil & vinegar
I start with a heaping bowl of fresh spring mix. Then, add a freshly-sliced peach, red onions, walnuts, goat cheese, and torn basil leaves. If you’re eating this as a dinner salad, I’d recommend adding a 3oz grilled chicken breast as the protein source.
There are so many flavors in this salad that it doesn’t require a heavy dressing. Oil & vinegar is a great complement, but if that isn’t your thing, a sweet balsamic would also work nicely.
