Chili is such a satisfying, easy, and filling meal. What more could you ask for?
I make mine a bit healthier by swapping out the ground beef for chicken (or turkey) and adding a bunch of fresh veggies.
Here’s what’s in my “lite” chicken chili:
▪️ 1lb ground chicken
▪️ 2 packets chili seasoning
▪️ 1 can black beans
▪️ 1 can pinto beans
▪️ 1 can kidney beans
▪️ 3 stalks celery, diced
▪️ 1 cup grape tomatoes, diced
▪️ 1.5 cups peppers, diced
▪️ 1 yellow onion, diced
▪️ 1 cup tomato juice
▪️ top with green onions + lite sour cream
My tip: I break apart the ground chicken in my hands before cooking. It’s a little gross, but trust me – the chicken has a much better consistency this way than trying to break it apart with a spatula.
- Cook the chicken, remove from the pan, and set aside.
- Next, lightly sautée the onions, peppers, celery, and tomatoes in a little bit of tomato juice and olive oil.
- Once the veggies are softened, add the beans (don’t drain!), the rest of the tomato juice, and the seasoning packets.
- Allow to simmer for about 10 minutes. Add the chicken back in and enjoy! 🍅
I like to serve mine with some green onions, sour cream, and a few tortilla chips.
Oh and hot sauce, too.
