I can feel fall creeping in, but we still have a few weeks left of summer grilling season. Try these grilled shrimp and peanut lettuce wraps for an easy, low-fat weeknight dinner.
Here’s what you’ll need:
🍤 4oz grilled shrimp per serving
🍤 1/2 avocado, sliced
🍤 Matchstick carrots
🍤 Diced peppers
🍤 Green lettuce leaves
🍤 2 Tablespoons peanut sauce (my favorite is the House of Tsang Bangkok Peanut Sauce)
🍤 Crushed peanuts
Like I said, this one is easy: simply grill the shrimp, add the veggies, and top with peanut sauce and crushed peanuts!
There are a ton of great recipes online for homemade peanut sauce, but I’m usually short on time. I love the House of Tsang Bangkok Peanut Sauce by Hormel Foods – it’s just the right amount of spicy and doesn’t contain too much fat or too many carbs. It’s available at Target, Walmart, and other grocery stores.
